    Spring Greens w/ Parmasean Crisps

    List of Ingredients


    • 1/2 cup shredded parmesean
    • 2 1/2 Tbsp lemon juice
    • 2 tsp dijon mustard
    • 1/4 tsp freshly ground pepper
    • 1/4 cup olive oil
    • 2 heads Boston lettuce, torn into bite-size pieces
    • 2 cups torn frisee
    • 2 Tbsp each snipped chilves and dill


    Instructions


    1. Heat oven to 375. line a baking sheet with nonstick foil. Spoon parmesan into eigth 3-in rounds, 1 Tbsp each, 1-in apart on the sheet. Bake 6-7 minutes until golden. Curl by draping over rolling pin while hot and letting cool long enough to retain curl.
    2. Whisk lemon juice, mustard and pepper. Slowl whisk in oil until mixed.
    3. Toss lettuce and frisee with herbs nad dresing nad serve with crisps.


    Final Comments


    Dressing and crisps can be made up to two days in advance.
