    Asparagus Potato Soup

    List of Ingredients


    • 3 1/2 lbs asparagus, trimmed & cut into 1-in
    • 3-4 large potatoes, peeled & cut into 1/2 in cubes
    • 3-4 med yellow onions, peeled & cut into slim wedges
    • 12 cup chicken broth
    • 3/4 tsp ground mace
    • 1/2 tsp ground nutmeg
    • 1-2 tsp salt
    • 1 tsp pepper
    • 1 tsp McCormick's Season All
    • Handful grated Parmesan cheese


    Instructions


    1. Place ingredients, except cheese in a large saucepan. Bring to a simmer over med heat, then adjust so it bubbles gently.
    2. Cover & simmer 30-35 minutes, until veg. are very tender. Cool the soup still covered for 20 minutes.
    3. Puree the broth & veggies in batches.
    4. Serve topped with cheesee.
