    List of Ingredients


    • 1 lb carrots, sliced into coins
    • 5 stalks celery, chopped 1/2in thick
    • 1 large onion, peeled and chopped
    • 1 5-lb chicken
    • 2 Tbl. chopped parsley


    Instructions


    1. In a large pot, place carrots, celery, onion and chicken; bacbone side up. Add water to cover.
    2. Bing to a boil, then reduce to a simmer and cook patially covered for one hour. Skim off foam and discard.
    3. Remove chicken from pot, and let stand until cool. Remove meat from bones, shred into bite sized pieces and return to the pot. Cook until heated through. Season with salt and pepper and top with parsley.
