    Sweet Corn Flan with Thyme

    List of Ingredients


    • 6 eggs
    • 1 cup heavy cream
    • 1/2 cup milk
    • 4 cups yellow corn kernals, plus 1 cup to top
    • 1 tbls. chopped fresh thyme leaves
    • 1 tsp salt
    • 1/4 tsp black pepper
    • 4 tbls unsalted butter
    • 1 tsp sugar


    Instructions


    1. Preheat oven to 375. in a large bowl, whisk eggs, cream, milk, corn, thyme, salt and pepper.
    2. Ladle mix into ramekins, leaving 1/2' clear at top. place ramekins in a roasting pan filled with water, water whould reach halfway up ramekins. Cover pan with foil and bake 25-30 minutes, or until set.
    3. Cool for 20 minutes before serving.
    4. As that is baking, melt the butter in a skillet over med heat; add remaning corn, salt and sugar. Stir until browned, about 20 minutes.
    5. Top each with a little of the mix and sprinkle with thyme.
