    Dublin Casserole of Pork

    List of Ingredients




    6 shoulder pork chops
    4 medium sour apples
    3 medium onions
    1 1/2 tablespoons brown sugar
    salt and pepper
    1 tablespoon cold water

    Recipe



    Remove excess fat from chops and cut into thin strips.
    Peel and core anslice apples. Slice onion finely.
    Take a wide casserole and grease thoroughly.
    Place half the apples in casserole.
    Cover with half the onion slices.
    Sprinkle with half the sugar and lay the pork on top.
    Season generously with salt and pepper.
    Sprinkle with water.
    Cover pork with remaining onions, then the apples.
    Toss the strips of fat in remaining sugar and arrange crisscross on top of apples.
    Sprinkle with any surplus sugar.
    Season again with salt and pepper.
    Cover tightly.
    Bake on middle shelf of moderate oven 350 degrees F. for 1 hour.
    Lower temperature to 300 degrees F and cook at least another hour.
    Serve with fluffy mashed potatoes.

    Serves 6 persons
