    Christmas Irish Spiced Beef

    List of Ingredients

    7 pounds brisket, round steak, or tail end of beef, boned

    Spicing:
    3 shallots
    4 bay leaves
    1 teaspoon powdered cloves
    1 teaspoon powdered mace
    1/2 teaspoon crushed peppercorns
    1 teaspoon allspice
    1/2 teaspoon chopped thyme
    3 tablespoons brown sugar
    2 teaspoons potassium nitrate
    1 pound coarse salt
    4 tablespoons molasses

    the potassium nitrate you should be able to obtain in a pharmacy.

    Recipe

    Chop the shallots and bay leaves very finely. Mix all the dry ingredients together and add the shallots and bay leaves. Stand the meat in a large pan and rub the mixture well into it on all sides. Leave the meat resting on this aromatic bed for 2 days. Now pour the molasses over it and rub the mixture well into the meat every day for a week. You can keep it refrigerated all this time. At the end of that time, tie the meat into a neat shape. Cover well with warm water and simmer gently for 6 hours. Press between 2 dishes with a heavy weight on top.
    This is always sliced and eaten cold with crackers or soda bread or brown bread.
