Onion Soup
List of Ingredients
1 lb. onions, sliced
4 1/3 cups chicken stock
1 1/3 cups milk
2/3 cups cream
2 tablespoons butter
2 tablespoons flour
2 cloves
1/4 teaspoon nutmeg
1 bay leaf

In Ireland onion soup is the cure for whatever ails you. This is a lovely creamy soup very different from the French brown onion soup.
Cook the onions and cloves in a pan with the butter until the onions are soft. Do not brown.
Carefully add the flour, stirring well for one minute.
Add the nutmeg, bay leaf and chicken stock.
Bring to the boil, stirring all the time until the onions are cooked.
Slowly add the milk and then the cream, stirring constantly.
Remove the cloves and bay leaf.
Serve garnished with grated cheese if desired.
Serves approximately 4 persons
