Spinach Soup With Green Onions

5 tablespoons butter
1 bunch green onions, chopped
1/4 cup unbleached flour
3 1/2 cups whole milk
1 1/2 bunches (leaves only) spinach, washed and chopped
1/8 teaspoon ground nutmeg
1 tablespoon chopped fresh mintRecipe
Melt 4 tablespoons butter in a large, heavy saucepan over medium heat.
Add the green onions and saute until just tender, about 3 minutes.
Sprinkle the flour over the onion mixture; whisk in the milk.
Whisk until the mixture comes to a boil and thickens, about 4 minutes. Remove from heat.
Melt 1 tablespoon butter over medium heat. Add spinach and toss until wilted and tender, but still bright green.
Add spinach to milk mixture.
Puree in batches in blender.
Return to pan and heat over low heat until warm.
Season with nutmeg, salt and pepper.
Ladle into bowls and garnish with fresh mint.
