    Guinness Christmas Pudding

    List of Ingredients




    1 cup flour
    2 cups soft breadcrumbs
    1 2/3 cup sultanas
    1/2 cup glace cherries
    1 cup raisins
    1/2 cup mixed peel
    1 1/4 cup brown sugar
    1 cup chopped suet
    3/4 cup Guinness
    pinch of mixed spice
    pinch of cinnamon
    pinch of salt
    5 - 7 eggs

    Recipe



    This pudding should be made no later than the beginning of November, they will keep in an airtight tin for up to one year.

    Combine all dry ingredients in a large mixing bowl, then add fruit.
    Stir in the well beaten eggs and then the Guinness.
    Grease two 7-inch cooking basins and pour the mixture into them.
    Cover them with foil and tie down with string.
    Steam the puddings 4 to 5 hours
    Allow the puddings to cool.
    Store in a dry cupboard in a tightly sealed tin.
    When used steam the pudding for 3 hours before serving.
    Traditionally this pudding is served with Irish Whiskey Butter.
