    List of Ingredients

    3 tablespoons butter or bacon fat
    1 small onion, peeled, diced
    2 cups shredded, cooked cabbage
    2 cups leftover mashed potatoes


    This dish is named for the noise it makes in the skillet as it cooks.

    Heat butter or bacon fat over moderate heat until melted. Add onions; saute until tender.
    Combine cabbage and mashed potatoes. Add to skillet; press with fork to form a large cake.
    Cook over moderate heat until well browned.
    Loosen potato cake with spatula; Slide onto plate.
    Flip back into skillet, uncooked-side-down.
    Cook until well browned.
    Serve this cut into wedges.
    Makes 4 servings.
