Chicken-Tomato Curry

- 1 to 2 T. canola oil
- 1 onion, chopped
- 3-4 chicken breasts, cubed
- 8 oz. mushrooms, sliced
- 2 tsp. mild curry powder
- 1 (14.5-oz) can chopped tomatoes
- 1 tsp. garam masala
Instructions
- Heat oil in large skillet. Add onions and saute until softened.
- Add chicken and cook until browned. Add mushrooms and stir to combine.
- Mix curry powder with a little water to make a paste, and add to the pan. Cook for a few minutes to "catch" the flavor, then stir in the tomatoes. Cook about 10 minutes.
- Stir in the garam masala, lower heat to a simmer, and continue to cook for 45 minutes or longer.
Final Comments
Serve over rice.
