    Chicken-Tomato Curry

    List of Ingredients


    • 1 to 2 T. canola oil
    • 1 onion, chopped
    • 3-4 chicken breasts, cubed
    • 8 oz. mushrooms, sliced
    • 2 tsp. mild curry powder
    • 1 (14.5-oz) can chopped tomatoes
    • 1 tsp. garam masala


    Instructions


    1. Heat oil in large skillet. Add onions and saute until softened.

    2. Add chicken and cook until browned. Add mushrooms and stir to combine.

    3. Mix curry powder with a little water to make a paste, and add to the pan. Cook for a few minutes to "catch" the flavor, then stir in the tomatoes. Cook about 10 minutes.

    4. Stir in the garam masala, lower heat to a simmer, and continue to cook for 45 minutes or longer.



    Final Comments


    Serve over rice.
