    Easy Winter Potatoes

    List of Ingredients


    • 4 medium red potatoes, cut into bite-size pieces (about 4 cups cut-up potato)
    • 1/2 small onion, cut in half and then sliced
    • 1/4 cup olive oil
    • 2 Tbsp. dijon mustard
    • 1 tsp. crumbled dried oregano leaves
    • 1/2 tsp. seasoned salt
    • freshly ground black pepper, to taste


    Instructions


    1. Preheat oven to 375 degrees F.

    2. Cut a piece of heavy-duty aluminum foil 18x24 inches; spray foil with dairy-free non-stick cooking spray.

    3. Layer potatoes and onion in middle section of prepared foil.

    4. To make sauce, place remaining ingredients in a small jar and shake to combine. Drizzle sauce over potatoes and onion. Gently stir to coat.

    5. Bring up sides of foil and double fold. Double fold ends to form one large foil packet, leaving room for heat circulation inside packet.

    6. Place packet on baking sheet. Bake for one hour. Serve hot.
