    Pasta Mizithra

    Not recommended as a main dish as much as a side dish to meat or fish.


    List of Ingredients


    • Pasta--spaghetti or linguini
    • Salt and pepper
    • Sweet unsalted butter--approx 1 tbsp per seving or enough to coat pasta
    • Mizithra cheese--to be freshly grated
    • Parsley or scallions for garnish--Optional


    Instructions


    1. Add approx. 1/4 of normal amount of salt to water for boiling pasta. NOTE: Mizithra cheese is somewhat salty in taste so it's addition requires a great cut in salt to whatever it is added to.
    2. Brown butter in pan--brown but do not burn--once browned turn to low just to keep warm till pasta is drained
    3. Drain pasta well and and add to pan of browned butter--immediately turn off heat and toss pasta in butter.
    4. Grate a nice even thin layer of mizithra on top of pasta and toss and plate.
    5. Garnish if desired.


    Final Comments


    This is an icredibly easy side dish and delightful alternative to potatoes and rice. Especially excellent with grilled white meat or fish.
