    French Onion Soup

    List of Ingredients

    1 cup dry sherry
    4 thinly sliced onions
    9 minced garlic cloves
    1 tbsp whole wheat flour
    4 c veggie broth
    1/2 tsp ground black pepper
    salt to taste
    6 slices toasted French bread

    Recipe

    1. In a large, heavy stockpot, heat wine until bubbling.
    2. Reduce heat to medium.
    3. Add the onions slowly, stirring frequently, for at least 20 minutes, until they become paste like.
    4. Add garlic, and continue to cook for 5 to 10 minutes, until garlic begins to brown.
    5. Stir in flour, and cook for 2 minutes.
    6. Pour in stock, and bring to a boil.
    7. Reduce heat, and simmer for 20 minutes.

    Season with pepper and salt.
    Ladle soup into bowls, and float a slice of toasted bread on top of each serving.
    Top with a slice of cheese and melt in the broiler, if desired.
