    Grandma Betty's Chile Relleno casserole

    List of Ingredients


    • 4 ----- 4oz cans ortrga whole green chilies
    • 1 lb cheddar cheese
    • 1 lb jack cheese
    • 1----- 13oz can evaporated milk
    • 4 eggs
    • 2----- 4 oz can or jar salsa
    • 3 TBSP flour


    Instructions


    1. wash green chilies and remove seeds

    2. lay 1/2 chilies flat on bottom of 12x8 caserole dish

    3. top with layer of 1/2 of the cheese slices

    4. then layer the rest of the chilies and top with remaining cheese

    5. seperate the egg whites from yolks

    6. add the yolks to the evaporated milk,flour,salt & pepper and mix

    7. beat the egg whites until fluffy and fold into the yolk mixture and pour over the top of the caserole

    8. bake at 350 degrees for 1 hour

    9. top with with salsa and bake for 1/2 hour longer



    Final Comments


    this reciepe serves6-8 and could also be cut in half for smaller servings
