    Vegetable Quiche

    List of Ingredients


    • 2 Tablespoons butter
    • 1/2 cup chopped onion
    • 1/2 cup chopped broccoli
    • 1/2 cup chopped cauliflower
    • 1 cup shredded swiss or provolone cheese
    • 3 eggs
    • 3 Tablespoons flour
    • 1 1/2 cups milk or half & half or a mixture of the two
    • 1/2 teaspoon salt
    • 1/8 teaspoon red pepper
    • 1/8 teaspoon white pepper


    Instructions


    1. Preheat oven to 450.

    2. Prepare Easy Pie Crust for a 1 crust pie. Place in pie pan and set aside.


    3. In a medium skillet melt butter. When skillet is hot and butter is melted, add onion, broccoli, and cauliflower. Saute just until slightly soft.

    4. Beat eggs, flour, salt, and the two peppers until light. Add milk and mix well.

    5. Scoop the vegetable mixture into the prepared pie crust. Sprinkle the cheese over the top of the vegetables. Pour the milk mixture over the vegetables and cheese until pie crust is full.

    6. Put pie into preheated oven and bake for 15 minutes. Reduce heat to 350 and bake for 45 minutes more or until knife inserted into the middle of the pie comes out clean.

    7. Remove from oven and let stand for 15 minutes before cutting.
