    This is my mom's recipe for an old family favorite.


    List of Ingredients


    • 3 1/2 cups mashed potatoes
    • 2 eggs
    • flour
    • corn (optional)
    • 1/4 cup oil


    Instructions


    1. Combine mashed potatoes, eggs, and enough flour to make a medium stiff batter. If you like corn in the cakes, now would be the time to add it.
    2. Heat oil to medium high in a large skillet. Use more oil if necessary to cover the bottom of the skillet completely.
    3. Drop batter by the tablespoon into the hot oil. Fry until golden brown on each side.
    4. Remove from skillet and drain on paper towel.
