This is my mom's recipe for an old family favorite.
List of Ingredients
- 3 1/2 cups mashed potatoes
- 2 eggs
- flour
- corn (optional)
- 1/4 cup oil
Instructions
- Combine mashed potatoes, eggs, and enough flour to make a medium stiff batter. If you like corn in the cakes, now would be the time to add it.
- Heat oil to medium high in a large skillet. Use more oil if necessary to cover the bottom of the skillet completely.
- Drop batter by the tablespoon into the hot oil. Fry until golden brown on each side.
- Remove from skillet and drain on paper towel.
