    Lemon Roasted Potatoes

    List of Ingredients

    5 red potatoes, quartered
    4 tablespoons olive oil
    1/4 cup chopped fresh parsley
    1 lemon, zested and juiced
    1 1/4 teaspoons salt
    1 teaspoon crushed dried rosemary
    1 teaspoon crushed dried thyme
    1/2 teaspoon sugar
    1/2 teaspoon pepper


    Preheat oven to 400F.

    Toss potatoes in a large bowl with half the olive oil. Place on a baking sheet; roast for 45 minutes, turning occasionally until browned and tender. Cool.

    Combine parsley, lemon juice and zest, salt, rosemary, thyme, sugar, pepper and remaining olive oil. Pour over potatoes and toss to evenly coat. Serve immediately.

    HINT: These zesty potatoes taste just as good at room temperature.

    Serves 6.
