    List of Ingredients




    8 ounces extra-lean ground sirloin beef or turkey breast
    ½ cup finely chopped onion
    ½ cup salsa (mild, medium, or hot)
    1 teaspoon JO's Taco Seasoning or any taco seasoning
    1 (15-ounce) can Bush's red kidney beans, rinsed and drained
    3 cups finely shredded lettuce
    1 medium tomato, chopped
    1/3 cup shredded Kraft reduced-fat Cheddar cheese
    ½ cup crushed Tostitos Light Restaurant Style Tortilla Chips
    ½ cup shredded carrots
    ¼ cup Land O Lakes no-fat sour cream

    Recipe



    In a large skillet sprayed with olive oil-flavored cooking spray, brown meat and onion. Add salsa, JO's Taco Seasoning, and kidney beans. Lower heat and simmer for 5 minutes. In a medium bowl, combine lettuce, tomato, Cheddar cheese, tortilla chips, and carrots. Evenly divide lettuce mixture onto 4 large salad plates, spoon about ¾ cup meat mixture over lettuce, and top each with 1 tablespoon sour cream.

    Serves 4 – Each serving equals:
    238 Calories, 6 gm Fat, 17 gm Protein, 29 gm Carbohydrate, 514 mg Sodium, 158 mg Calcium, 6 gm Fiber
