    2 cups unseasoned dry bread cubes
    8 ounces extra-lean ground sirloin beef or turkey breast
    1 teaspoon JO's Sausage Seasoning
    4 eggs, or equivalent in egg substitute
    2 cups fat-free milk
    1 (10 3/4-ounce) can Campbell's Healthy Request Cream of Mushroom Soup
    1 (10-ounce) package frozen chopped spinach, thawed and thoroughly drained
    1 (4.5-ounce) jar sliced mushrooms, drained
    1 full cup shredded Kraft reduced-fat Cheddar cheese
    1 cup chunky salsa (mild, medium, or hot)
    ½ cup Land O Lakes no-fat sour cream

    Recipe



    Place bread cubes in a 9-by-13-inch baking dish sprayed with butter-flavored cooking spray. n a large skillet sprayed with butter-flavored cooking spray, brown meat with JO's Sausage Seasoning. Evenly sprinkle browned meat mixture over bread cubes. In a large bowl, combine eggs and milk using a wire whisk. Add mushroom soup, spinach, mushrooms, and Cheddar cheese. Mix well to combine. Evenly pour mixture over browned meat and bread cubes. Cover. Refrigerate overnight. Preheat oven to 325 degrees. Bake casserole for 50 to 55 minutes or until mixture is set and lightly browned. Cut into 8 pieces. When serving top each piece with 2 tablespoons salsa and 1 tablespoon sour cream.

    HINTS: 1. Pepperidge Farm bread cubes work great.
    2. ½ teaspoon poultry seasoning, ¼ teaspoon ground sage and ¼ teaspoon garlic powder may be used in place of JO's Sausage Seasoning.

    Serves 8 – Each serving equals:
    236 Calories, 8 gm Fat, 17 gm Protein, 24 gm Carbohydrate, 695 mg Sodium, 300 mg Calcium, 2 gm Fiber
    Diabetic Exchanges: 2 Meat, 1 Starch/Carbohydrate, 1 Vegetable
