    Split Pea Soup

    List of Ingredients


    • 2 c. (1 lb.) dry split peas
    • 2 qts. water
    • 1 ham bone
    • 1 c. celery, minced
    • 1/2 c. onion, finely chopped
    • 1 sprig parsley
    • 1/4 tsp. pepper


    Instructions


    1. Heat peas and water to boiling; boil gently for 2 minutes. Remove from heat; cover and let stand 1 hour.

    2. Add remaining ingredients to peas. Heat to boiling. Reduce heat and simmer, covered, 2 1/2 to 3 hours until peas are very soft.

    3. Remove bone; trim meat and add to soup. If desired, thin with milk or water. Additional ham may be added, if desired. Season to taste.
