    White Chocolate & Macadamia Nut Cookies

    List of Ingredients


    • 1/2 c. unsalted butter, softened
    • 1/2 c. light brown sugar
    • 1/4 c. white sugar
    • 1 egg
    • 1 tsp. vanilla
    • 1 c. + 2 tsp. flour
    • 1/2 tsp. baking soda
    • 1/4 tsp. salt
    • 1 3/4 c. white chocolate chunks
    • 1 c. coarsely chopped macadamia nuts


    Instructions


    1. POreheat oven to 350° F. Lightly butter two cookies sheets and set aside.

    2. Cream butter and both sugars with an electric mixer at medium speed until light, about 3 minutes. Add egg and vanilla and mix until well blended.

    3. Sift flour with baking soda and salt. Slowly add this mixture to the butter mixture. Stir in chocolate chunks and nuts.

    4. Roll tablespoons of dough in your hands to make balls. Place on baking sheets and gently flatten.

    5. Bake until lightly golden, about 12 minutes.

    6. Let sit on cookie sheet a few minutes, then remove to a wire rack to cool.

    7. Yield: About 30 2-inch cookies.
