    Cranberry Orange Scones

    List of Ingredients


    • 2 c. flour
    • 1 Tbsp. sugar
    • 2 tsp. baking powder
    • 1/2 tsp. salt
    • 1/4 c. butter or margarine
    • 2/3 c. non-fat plain yogurt
    • 1/4 c. real egg substitute
    • 1 c. Craisins (dried cranberries)
    • 2 tsp. orange zest
    • Sugar


    Instructions


    1. Preheat oven to 425° F. Lightly spray cookie sheet with non-stick vegetable spray.

    2. Combine dry ingredients in a large mixing bowl. Work butter or margarine into dry ingredients until butter is the size of small peas using a pastry blender or fork. Add remaining ingredients except sugar, mixing just until dry ingredients are moist.

    3. Turn dough onto a lightly floured surface and gather into a ball. Spread dough into a 9-inch circle. Cut into 8 wedges. Place on cookie sheet. Sprinkle with sugar.

    4. Bake 15 to 18 minutes or until light golden brown. Makes 8 scones.
