    Peanut Cookies

    Source of Recipe

Home economics cookbook, West High School, Salt Lake City, UT about 1935-37

    Recipe Introduction

My mother used to make these cookies on a regular basis. The recipe calls for lard, which must be used in order to reproduce the original taste.

    List of Ingredients

    • 1/2 c. melted lard (no substitutes)
    • 1 c. brown sugar
    • 1 egg
    • 1/2 c. buttermilk
    • 1 tsp. vanilla
    • 1 c. chopped peanuts*
    • 2 c. flour*
    • 1/2 tsp. salt
    • 1/2 tsp. baking soda
    • 2 tsp. baking powder

    Instructions

    1. In bowl, stir lard and sugar together; add egg and vanilla. Beat well. Add buttermilk and dry ingredients, alternately; add nuts.
    2. Drop by spoonsfuls onto greased cookie sheet. Bake about 8 minutes at 425 degrees.

    Final Comments

NOTE: Recipe does not specify salted or unsalted peanuts. I add about 1/2 c. additional flour to give more body to the dough for a thicker cookie.
