    White Chocolate Macadamia Nut Cookies

    Recipe Introduction


    Be sure not to overcook these as they get 'crunchy' but are still fabulous!


    List of Ingredients


    • 1 c. butter, softened
    • 1 1/2 c. packed brown sugar
    • 1 c. shortening
    • 1 c. white sugar
    • 2 eggs
    • 1 Tbsp. vanilla
    • 4 c. all-purpose flour
    • 2 tsp. baking soda
    • 1 tsp. salt
    • 2 c. white chocolate chips
    • 14 oz. macadamia nuts, chopped


    Instructions


    1. Preheat oven to 350°F (180°C). Lightly grease cookie sheets*
    2. Beat butter and shortening until soft and creamy. Gradually add the sugars and beat well.
    3. Add eggs and vanilla and beat well.
    4. Combine flour, soda and salt; gradually add to butter mixture beating well after each addition. Stir in chips and nuts.
    5. Drop dough by rounded teaspoonsfuls onto prepared cookie sheets. Bake for 10-12 minutes or until done. Remove to wire racks to cool.


    Final Comments


    *I used silpat sheets rather than greased cookie sheets.
