    8 ounces uncooked whole wheat egg noodles
    1 cup white wine, dry
    1/3 cup spicy vegetable juice
    1/4 cup water
    2 tablespoons all-purpose flour
    1/4 teaspoon salt
    1/4 teaspoon black pepper
    1 pound lean beef top sirloin steak, 2 1/2" x 1/4" strips
    6 ounces fresh medium mushrooms, quartered (2 cups)
    medium onion, chopped (1 cup)
    1/3 cup light sour cream
    chopped fresh parsley



    Prepare noodles as directed on package, omitting any salt or fats. Rinse. Let stand in warm water.
    In 2-cup measure, combine wine, juice, water, flour, salt and pepper, whisk until well blended and set aside.
    Combine steak, mushrooms and onion in 12-inch nonstick skillet. Cook over medium heat for 8 to 10 minutes, or until meat is no longer pink, stirring frequently. Add wine mixture to skillet. Cook for 2 to 5 minutes, or until sauce thickens, stirring constantly. Remove from heat. Stir in sour cream.
    Drain noodles. Serve stroganoff over noodles. Garnish with snipped fresh parsley.


    Serve this with colorful veggies, such as steamed broccoli or carrots.
