Roasted Chicken

1 4 to 4 1/2 pound chicken
1/2 teaspoon poultry seasoning
1/4 teaspoon freshly ground black pepper
1/4 teaspoon paprika
1 lemon
Preheat oven to 350º F.
Remove parts from inside cavity of chicken and discard. Rinse chicken and pat dry. Sprinkle seasonings over chicken and place whole lemon inside cavity.
Place chicken on a roasting rack, breast side up, in a deep roasting pan. Bake 1 1/4 to 1 1/2 hours.
Chicken is done if clear juices run from the thigh when pierced with a fork or when thermometer inserted in the thigh registers 180º to 185º F.
Serve on a heated platter and remove skin after carving.
