    Tuna Salad

    1 6 ounce can white tuna, in water, drained
    1 teaspoon olive oil
    2 tablespoons mayo (low fat works well)
    2 tablespoons dijon mustard, I like brown mustard
    1-2 tablespoons curry powder (to taste)
    1/2 teaspoon thyme
    1/2 teaspoon oregano

    Mix all ingredients in a bowl. Make sure tuna is broken down well. Spread on your favorite cracker or bread. Great as a sandwich spread or appetizer spread.

    I eat these on Triscuits for a lunch, I have also added some celery and/or onion.
