Frozen Fruit Salad
Sherry, Lynette and I spent an afternoon this September cutting fruit for this easy fruit salad. We really enjoy the fresh fruit flavor of this salad all year long! A quick salad to pull out of the freezer for company.
List of Ingredients
- 6 fresh peaches
- 6 fresh pears
- 2 cups seedless grapes
- 1 (20 oz.) can chunk pineapple
- 2 cups mandarin oranges
- 1 (6 oz.) can frozen orange juice concentrate
- 1 cup sugar
- 1 cup water
- 1 qt. lemon-lime carbonated drink
- quart size freezer bags
Instructions
- Peel and cut peaches and pears into 3/4 inch chunks.
- Drain pinapple and mandarin oranges saving juice. Add water to juice to make one cup.
- Add grapes, pineapple, mandarin oranges to peach and pear mixture.
- In a small bowl combine orange juice concentrate, sugar and reserved juice. Stir until dissolved.
- Pour liquid over fruit. Mix well.
- Spoon fruit mixture into freezer bags. Freeze.
- When ready to use, remove desired quantity from freezer 30 minutes before serving time.
- Pour carbonated drink over frozen fruit chunks and serve.
Final Comments
Makes approximately five 2 cup servings. Can also be served without the carbonated drink. Just thaw 30 minutes or so and serve!
