    Cook Time: 30 to 35 minutes
    Serves: 6


    List of Ingredients


    • 4 Tbsp. (1/2 stick) butter
    • 2 Tbsp. vegetable oil
    • 6 boneless chicken breast halves (about 1 1/2 - 1 3/4 pounds)
    • 1/4 cup all-purpose flour
    • 1 can (8oz.) sliced mushrooms
    • 1/2 cup Marsala wine
    • 1/2 cup beef broth
    • 1/4 tsp. salt


    Instructions


    1. Heat 2 Tbsp. of the butter in large skillet over medium-high heat until melted.
    2. Coat chicken in flour, shake off excess. Working in batches to avoid crowding, add chicken to skillet; saute for 4 to 6 minutes until golden brown, turning once. Remove chicken from skillet.
    3. Add mushrooms; saute 2 minutes or unitl browned. Add the wine, 1/4 cup of the broth and the salt to skillet; simmer for 2 minutes, scraping up any bits from bottom of skillet with a wooden spoon.
    4. Return chicken to skillet. Bring to boil over high heat. Cover and reduce heat to low; simmer for 15 minutes or until cooked through basting occasionally.
    5. Remove chicken to serving platter and keep warm. Add remaining broth to skillet, bring to boil for 2 minutes. Remove skillet from heat, Stir in remaining butter until just incorporated.
    6. To serve, pour sauce over chicken.
