    Chili Barbequed Ribs

    List of Ingredients

    Sauce:
    4 tsp. olive oil
    1 c. minced onion
    1-1/2 c. water
    1 c. catsup
    2/3 c. packed brown sugar
    2/3 c. cider vinegar
    1/4 c. unsulfured light molasses
    2 Tbsp. Worchestershire sauce
    2 Tbsp. instant coffee powder
    2 tsp. prepared mustard
    2 tsp. chili powder
    1 tsp. ground cumin
    1/4 tsp. ground cinnamon
    1/4 tsp. cayenne pepper

    Ribs:
    6 baby back pork ribs (about 9 lbs. total weight)
    1/2 c. cider vingar
    4 tsp. liquid smoke flavoring

    6 Tbsp. chili powder
    3 Tbsp. ground cumin
    1-1/2 Tbsp. onion powder
    1/4 tsp. cayenne pepper

    Recipe

    For sauce:
    Heat oil in a heavy large saucepan over med. heat. Add onion and saute 5 min. Wisk in remaining ingredients.Bring to a boil. Reduce heat and simmer until reduced to 3 c. (about 30 min.)

    For ribs:
    Score white membrane on underside of ribs. Place ribs in a large roasting pan. Mix vinegar and liquid smoke in a small bowl. Brush over both sides of ribs. Refrigerate 2 hours.

    Prepare grill for indirect heat. Mix chili powder, cumin, sugar, onion powder, and cayenne. Rub over both sides of ribs. Season with salt and pepper. Grill meat side up for 1 to 1-1/2 hours.

    Baste both sides of ribs with sauce the last 20-30 min. of grill time. Serve with remaining sauce.

    Serves 8.
