    Wild Rice Soup

    List of Ingredients




    2 Tbsp. butter
    1 Tbsp. onion minced
    1/4 lb. mushrooms
    1/2 lb. diced ham
    1/4 c. flour
    4 c. chicken broth
    1/2 c. wild rice
    1/2 tsp. salt
    1/3 c. grated carrots
    3 Tbsp. slivered almonds
    1 c. half-and-half
    3 Tbsp. dry sherry
    Minced parsley or chives

    Recipe



    Combine 1/2 c. wild rice and 2 c. water and cook. Drain

    any excess water. Melt butter in sauce pan. Saute onions

    and mushrooms until tender. Blend flour, gradually add

    broth. Cook, stirring constantly until mixture thickens

    slightly. Stir in cooked rice and salt. Add ham, carrots

    and almonds, simmer about 5 min. Blend in half-and-half

    and sherry. Heat to serving temp. Garnish with parsley

    or chives.
