    List of Ingredients


    • 1 lb. mahi mahi,fresh or frozen
    • 2 tsp olive oil
    • 2 tsp lemon juice
    • 1/4 tsp salt
    • Fresh ground pepper to taste
    • 2 cloves garlic,minced
    • Capers(optional)


    Instructions


    1. Cut the mahi mahi into 4 serving-size portions. Brush both sides of the fish with the olive oil and lemon juice. Sprinkle with salt and pepper,then rub the garlic on the fish.
    2. To grill,arrange the fish on a grill rack or use a grill basket that has been sprayed with an olive oil cooking spray. Grill over med-hot coals for 4-6 min. per 1/2 in. of thickness,or until the fish flakes easily when tested with a fork. If the fish is more than 1 in. thick,gently turn it halfway through grilling.
    3. To broil,arrange the fish on the rack of a broiler pan that has been sprayed with an olive oil cooking spray. Broil 4 in. form the heat for 4-6 min. per 1/2 in. of thickness,or until the fish flakes easily when tested with a fork. If the fish is more than 1 in. thick,gently turn it halfway through broiling.
    4. To serve,top the fish with capers,if using.
