    List of Ingredients


    • 8 ozs. spelt or whole-wheat elbow pasta
    • 1 Tbsp trans-fat-free margarine
    • 1 Tbsp whole-wheat flour
    • 1 1/4 cups fat-free half-and-half
    • 1 cup shredded reduced-fat sharp cheddar cheese
    • 1/4 tsp salt
    • 1/8 tsp freshly ground black pepper


    Instructions


    1. Heat oven to 400F.
    2. Bring a saucepan of salted water to a boil. Cook pasta until al dente(tender but still firm to the bite), about 6 min. Drain and rinse under cold water for 30 sec.
    3. While pasta is cooking,melt margarine in a wide,straight-sided skillet over me. heat. Add flour,reduce heat to low,and whisk continuously until flour is incorporated and cooked,about 2 min. Add half-and-half,bring to a simmer, and cook,whisking frequently,until blended and thickened,3-5 min.
    4. Add cheese,salt, and pepper;stir until blended. Add pasta and stir until coated and warmed,1 min. Transfer to an 8 X 8 in. baking dish and bake for 10 min. Serve hot.
    5. 4 servings (1 1/2 cups)
