    List of Ingredients


    • 1 seedless cucumber,centers scooped out and thinly sliced
    • 1/3 cup grape tomatoes,halved
    • 2 2/3 Tbsp thinly sliced red onion
    • 1 1/3 Tbsp tarragon or other flavored vinegar
    • 2/3 tsp artificial sweetener of choice
    • Red pepper flakes to taste
    • Pinch of salt


    Instructions


    1. Combine first 3 ingredients in a bowl. Seperately, combine vinegar and remaining ingredients in a small bowl;stir with a whisk until artificial sweetener is dissolved. Pour vinaigrette over cucumber mixture;toss gently to coat. Cover and refrigerate 1 hour.
