List of Ingredients
- 1 med. zucchini,cut into bite-size pieces
- 1 med. summer squash,cut into bite-size pieces
- 1 med. red bell pepper,cut into bite-size pieces
- 1 med. yellow bell pepper,cut into bite-size pieces
- 1 lb. fresh asparagus,cut into bite-size pieces
- 1 red onion,cut into bite-size pieces
- 3 Tbsp olive oil
- 1 tsp salt
- 1/2 tsp fresh ground black pepper
Instructions
- Heat the oven to 450F. In a large roasting pan,combine the zucchini,squash,red and yellow peppers,asparagus, and onion. Add the olive oil,salt,and black pepper. Toss to mix and coat. Spread in a single layer.
- Roast for 30 min.,stirring occasionally,until the vegetables are lightly browned and tender.
