1. Preheat griddle to 375 degrees, or stove to medium high.
2. Mix all dry ingredients in bowl.
3. Mix buttermilk and egg in measuring cup.
4. Wisk milk mixture into dry ingredients.
5. Make sure griddle is hot, water drops should bounce and spatter off griddle.
6. Put 1/4 C batter onto griddle.
7. Flip pancake when top bubbles and edges are dry.
8. Cook until golden on bottom.
9. Keep warm on oven proof plate in oven set on low.
Serve with
Butter, jam, peanut butter, fruit butters, fresh fruit, bananas, whipped cream, syrup, marmalade, chocolate and carmel syrups, powdered sugar, pie fillings, etc.
Scrambled eggs, sausage, canadian bacon, bacon, salsa, hash browns, fryed eggs, keilbasa, and anything else you like. Put all of these things on top of the pancake and roll it up like a burrito, and eat it on the go. Or have it on the side on your plate.
Variations
*Mix berries and other items like chocolate chips in the batter.
*You can make faces, shapes or names. To make a face, first pour out the eyes, nose, mouth. Then pour out the pancake in the shape of the head over the face parts. This will make darker those parts compared to the head. Make things like Mickey Mouse, dinosaurs, letters, anything you like. It is very easy.
*You can use metal cookie cutters to make shapes. First dip them in melted butter or spray them with cooking spray. They manufacture special shapes to do this with. Go to a specialty cooking store and see what they have.
