Jello Rhubarb Berry Jam

This is a really different way to make and flavor jams. A good way to have the kids help with picking and preparing.

Ingredients
6 C Diced fresh rhubarb (about 1-1/2 lb.)
3-1/2 C Sugar
1/4 C Water
1 pkg. (4-serving size) JELL-O Brand Strawberry or Raspberry Flavor Gelatin

Serves: 4 Cups

Directions
1. Mix rhubarb, sugar and water in large saucepan. Stirring constantly, cook on high heat until sugar is dissolved, about 2 minutes.
2. Cover and continue cooking on medium heat, until rhubarb is tender, stirring occasionally.
3. Uncover and boil 12 to 15 minutes longer, or until mixture is slightly thickened, stirring occasionally.
4. Remove from heat.
5. Add gelatin and stir until dissolved. Skim off any foam with metal spoon.
6. Ladle quickly into prepared freezer containers, filling to within 1/2 inch of tops. Wipe rims. Cool and then put lids on. Store in refrigerator or freezer.
Serve with
Muffins, toast, french toast, ice cream, milkshakes, and anything you want to taste good.
