    Here is a basic recipe that can be adapted for what is in season, what you have, and most of all, what you like. Just add everything and everything. Make it sweet, savory, or add herbs. But most people like them topped with frosting and things like coconut.

    Tools

    Bowl
    2 C measuring cup
    Fork
    Spatula
    Measuring spoons, 1/2 Tsp, 1 Tbl
    Muffin Pan
    Paper muffin liners
    Cooling rack
    Hot pads


    Ingredients

    2 C Flour
    1 Tbl Baking powder
    1/2 Tsp Salt
    3/4 C Sugar
    1 Egg
    1 C Milk
    1/4 C Oil

    Recipe



    Serves: 1 dozen
    Time required: Prepare: 10 minutes Cook: 25 minutes
    Oven temperature: 400 degrees
    Difficulty: Easy


    Directions

    1. Preheat oven to 400 degrees F.

    2. Stir together the flour, baking powder, salt and sugar in a large bowl. Make a well in the center.

    3. In a small bowl or 2 cup measuring cup, beat egg with a fork. Stir in milk and oil.

    4. Pour all at once into the well in the flour mixture. Mix quickly and lightly with a fork until moistened, but do
    not beat. The batter will be lumpy.

    5. Pour the batter into paper lined muffin pan cups.

    6. Bake for 25 minutes, or until golden.


    Serve with

    A sausage patty in the middle and a fried egg.

    Lather it up with jam, peanut butter, melted cheese, or anything you want.


    Variations

    *Blueberry Muffins: Add 1 cup fresh blueberries.
    Raisin Muffins: Add 1 cup finely chopped raisins.
    Date Muffins: Add 1 cup finely chopped dates.
    Cheese Muffins: Fold in 1 cup grated sharp yellow cheese. Bacon Muffins: Fold 1/4 cup crisp cooked bacon, broken into bits.

    *Top these with your favorite toppings recipe.
