Chilled Blueberry Soup

Here is a soup that is great for a picnic, or for a meal on the porch. This is also good for parties that happen in the afternoon. This is a light and easy recipe that can be prepared at the last minute, or add the sour cream and seltzer before serving.

Food processor or blender
Strainer
Rubber spatula
Whisk
Measuring cup
Measuring spoon, 1 Tbl
Ingredients
3 C Fresh blueberries, picked over and chilled, or 1-1/2 lbs, frozen, thawed and drained
1 C Seedless white grapes, well chilled
1 C Sour cream, well chilled
1 Tbs plus 1 Tsp Fresh lemon juice
2 Tbs Sugar, or to taste
1 C Seltzer or club soda, well chilled

Serves: 4
Time required: Prepare: 10 minutes
Difficulty: Easy
Directions
1. Purée berries and grapes in a food processor or blender.
2. Strain through a sieve into a bowl, pushing hard on the solids. Extract as much juice as possible and discard solids.
3. Whisk sour cream, lemon juice and sugar into juice.
4. Stir in seltzer and serve.
Serve with
Finger sandwiches, vegetable platter with dips, crusty bread, granite.
Variations
*Add in some other berries or fruit like banana.
