Serves: Makes 10-12 biscuits: 2-1/4 inch
Time required: Prepare: 5 minutes Cook: 15 minutes
Oven temperature: 450 degrees
Difficulty: Average
Directions
1. Preheat oven to 450 degrees.
2. Measure flour, brown sugar, baking powder, salt, cinnamon, ginger, and all spice and put in a mixing bowl.
3. Cut butter into small pieces. Add to the dry ingredients in the mixing bowl.
4. Combine milk and yams and add mixture to the mixing bowl.
5. Add chopped pecans.
6. Put baking sheet in oven with butter on it to melt.
7. With your hands, knead the mixture until it is one smooth mass of dough. Do not over mix or treat roughly.
8. Use a rolling pin to roll the dough to a 1/2 inch thickness on a floured surface. Cut the rolled out dough with a 2 inch round cookie cutter.
9. Place biscuits on melted butter, then flip them over on baking sheet. This puts butter on both top and bottom to get a better flavor and crust. Leave 2 inches between biscuits.
10. Bake at 450 degrees for approximately 10-15 minutes or until done. Biscuits will be lightly browned when done. Cool on a baking rack.
Serve with
Butter, jam, peanut butter or anything you like.
Great for a breakfast biscuit.
Make a breakfast sandwich.
Make it into a sticky bun, with a carmel topping and the pecans.
Variations
*Use a variety of squash in place of the yams.
