    BLUEBERRY CORNMEAL BREAD

    List of Ingredients




    1 1/2 cups all-purpose flour
    3/4 cup yellow cornmeal
    2 teaspoons baking powder
    1/2 teaspoon salt
    1/2 cup shortening
    3/4 cup sugar
    2 egg whites
    1 egg
    1 teaspoon vanilla extract
    3/4 cup milk
    2 cups fresh or frozen blueberries ( if using frozen, measure while frozen, then thaw)

    Recipe



    Preheat oven to 350° F. Grease and flour a 9 x 5x 3 inch loaf pan.

    In a large bowl or on a piece of waxed paper, stir together the flour, cornmeal, baking powder, and salt; set aside.

    In a large bowl, cream the shortening. Add the sugar; cream until fluffy. Beat in the egg whites, egg, and vanilla. Beat in the dry ingredients alternately with the milk. Stir in the blueberries.

    Spread into prepared pan; bake 1 hour or until a wooden pick inserted in the center comes out clean. Turno onto a rack to cool.

    Variation: Use chopped peaches, apples, or raisins instead of the blueberries.

    Makes: one 9 inch loaf; Serves: 14 - 16
