    BLUEBERRY PIE FILLING

    List of Ingredients

    4 c. blueberries
    1 c. sugar
    1/3 c. cornstarch
    1/4 c. lemon juice

    Recipe

    Mix berries, sugar and lemon juice in a heavy saucepan. Bring to boil, stirring frequently. Mix cornstarch with enough water to make a paste. Pour into the berry mixture, stirring constantly until thick. Cool. Pour into unbaked pie shell and bake at 400 degrees for about 35 minutes or until crust is golden.

    Notes: this is really good to make ahead, when you have time, and store in the fridge, for when you need to "throw together" a pie real quick! It can be used in crepes, over ice cream, in fruit tarts, pies, etc.
