    BUTTERMILK BLUEBERRY PANCAKES

    1 egg
    1¼ cups buttermilk
    ½ teaspoon baking soda
    1¼ cups flour
    1 Tablespoon sugar
    2 Tablespoons softened butter
    1 teaspoon baking powder
    2 Cups blueberries

    Recipe



    Heat a griddle while making the batter.

    Beat the egg. Beat in the buttermilk, and the baking soda.

    Mix together the flour, sugar, butter, baking powder and mix into the buttermilk mixture. Beat until smooth. Fold in the blueberries.

    Cook on hot griddle. Cook the first side until they are puffed and full of bubbles. But BEFORE the bubbles break, flip to the other side. (It's important not to let the bubbles break, otherwise your pancakes will be heavy and not light!)
