    List of Ingredients




    1¼ cups quick-cooking oats
    3/4 cup plain nonfat yogurt
    1/2 cup orange juice
    1¼ cups whole wheat pastry flour
    1/3 cup sugar
    1 Tablespoon baking powder
    1/2 teaspoon baking soda
    1 teaspoon dried grated orange rind, or 1 Tablespoon fresh
    2 egg whites, lightly beaten
    1 cup fresh or frozen blueberries

    Topping
    1 Tablespoon sugar

    Recipe



    Combine the oats, yogurt, and orange juice in a medium sized bowl. Stir to mix well, and set aside for 5 minutes.

    Combine the flour, sugar, baking powder, baking soda, and orange rind in a large bowl, and stir to mix well. Add the oat mixture and egg whites, and stir just until the dry ingredients are moistened. Fold in the blueberries.

    Coat muffin cups with cooking spray, and fill 3/4 full with the batter. Sprinkle 1/4 teaspoon of sugar over the top of each muffin, and bake at 350 degrees F for 16 minutes, or just until a wooden toothpick inserted in the center of a muffin comes out clean.

    Remove the muffin tins from the oven, and allow them to sit for 5 minutes before removing the muffins. Serve warm or at room temperature.

    Makes 1 dozen
