    To this basic recipe for pancakes, you can add blueberries, raspberries, bananas, nuts. This tells you how to make a basic plain pancake. Then experiment, and let you mind run wild!

    List of Ingredients




    2 cups flour
    3 teaspoons baking powder
    ½ teaspoon salt (very important**)
    ¼ cup sugar
    2 eggs (or equivalent egg substitute)
    2 Tablespoons oil
    1 cup milk***

    Recipe




    Sift dry ingredients into a bowl and stir in liquid ingredients with whisk or spoon just until mixed. Do not beat.

    Rub griddle or frying pan with oil. Heat until water dropped from your hand bounces around.

    Drop about a large mixing spoonful of batter for each pancake. Cook until bubbles form all over the top and it's brown on bottom. Flip, cook until brown on
    other side. Keep your griddle very hot at all times.

    **The reason that it is important NOT to omit the salt in this recipe is that the combination of the baking powder and the salt is what makes your pancakes rise, and be light and fluffy.

    ***For buttermilk pancakes, substitute buttermilk for the milk.
