    1 small chicken, 2½ to 3 lbs.
    1 onion, chopped
    6 leeks cut into 1-inch-long pieces
    2 oz. Long-grain rice
    1 teaspoon salt
    3 pints water
    salt and pepper
    1 Tablespoon chopped parsley
    1 small carrot, grated

    Recipe



    Place the chicken and chopped onion in a large saucepan. Add the water and bring to a boil. Cover and simmer for 1½ hours or until the chicken is tender. Remove from the heat and skim off any white scum. Take out the chicken and strip the meat from the bones. Discard the bones. Return the meat to the stock. Add the leeks, rice, grated carrots, and 1 teaspoon salt. Bring back to a boil, cover, and simmer for another 30 minutes. Season with salt and pepper to taste. Add the parsley before serving. Serves 4 to 6.
