    EGGLESS CHOCOLATE CAKE

    Source of Recipe

    GRANDMA

    Recipe Introduction

Rather than greasing and flouring the pans, I learned to make this cake with wax paper lining the cake pans. You take a piece of wax paper, slightly bigger than your cake pan. Turn your cake pan upside down, and place the wax paper on top of it. With a pair of scissors, score around the pan (so you are etching a circle the exact size of the pan in the wax paper). Cut the circle out, and it will fit exactly in the bottom of your cake pan. When your cake is finished cooking, and cooled slightly, run a knife around the edge of the cake, and flip the cake out of the pan. Then you simply peel the wax paper off the bottom of the cake. Your cake won't stick to the pan, and your clean-up will be easier.

    List of Ingredients

    3 cups flour
    2 cups sugar
    6 Tablespoons unsweetened cocoa
    2 teaspoons baking soda
    1 teaspoon salt
    3/4 cup vegetable oil
    2 teaspoons vanilla
    2 Tablespoon vinegar
    2 cups VERY COLD water

    Recipe

    Preheat oven to 350°.
Sift dry ingredients together. Mix oil, vanilla, vinegar & cold water. Add to the dry ingredients and beat well. Pour into two prepared 8" cake pans. Bake for 35-40 minutes. Partially cool before removing from pans, to finish cooling on baker's racks.
