    Cooking Pleasures, July 2006

    List of Ingredients

    CRUST:

    1½ cups graham cracker crumbs

    5 Tablespoons unsalted butter, melted

3/4 cup miniature semi-sweet chocolate chips

    FILLING:

    10 oz cream cheese, softened

    ¼ cup sugar

    1 egg, room temperature

    1 teaspoon vanilla

    DOUGH:

    5 Tablespoons unsalted butter, softened

    ¼ cup packed brown sugar

    3 Tablespoons sugar

    1 teaspoon vanilla

    dash salt

    ½ cup all-purpose flour

    1 cup semi-sweet chocolate chips

    TOPPING:

¼ cup semi-sweet chocolate chips, melted

    Recipe

    1. Preheat oven to 350°. Line a 9x9x2 inch pan with aluminum foil, leaving extra foil hanging over the edges. Spray the foil with cooking spray.

    2. In a medium bowl, stir together the graham cracker crumbs and melted butter until crumbs are moistened. Stir in miniature chocolate chips. Press into bottom and 1 inch up the sides of the pan. Bake for 6 minutes, or until set. Cool. Decrease oven temperature to 325°

    3. With an electric mixer, beat the cream cheese, and ¼ cup sugar at low speed until smooth. Beat in egg and 1 teaspoon of vanilla just until blended. Pour filling into crust.

    4. In the same bowl (with the mixer), beat 5 Tablespoons of butter, brown sugar, 3 Tablespoons sugar, 1 teaspoon vanilla and salt at medium speed for 1 minute. Beat in flour at low speed just until incorporated. Stir in 1 cup of chocolate chips. Drop teaspoons of this dough over the filling. Bake at 325° for 30 to 35 minutes, or until the top feels dry and looks set when gently shaken. Cool completely on wire rack.

    5. Dip fork into melted chocolate chips and drizzle chocolate over the top of the bars. Let stand until set.

    6. Using the edges of the foil, lift from the pan, and peel away foil. Cut into 16 pieces. Bars can be made up to two days ahead, and should be covered and refrigerated, but brought to room temperature before serving.
