    1½ lbs meaty pork spareribs
    1 Tablespoon dry sherry
    2 Tablespoons soy sauce (dark)
    3 Tablespoons cider vinegar
    4 Tablespoons sugar
    5 Tablespoons water

    Recipe



    Separate the ribs, and (with meat side down) using a large cleaver, cut each rib into 3 pieces. Put them in a skillet or sauce pan, and set it over high heat. Add the liquid ingredients and stir. When liquid comes to a boil, turn heat down to a gentle simmer. Cover and simmer for about 40 minutes, turning the ribs every once in a while. Uncover and turn heat to high, bringing it to a SIZZLING boil. Stir constantly until the liquid is almost evaporated. Serve ribs with Rice and a vegetable.
